Tom is celebrated as one of the country’s most talented young chefs, known for crafting menus that celebrate seasonality and British produce. His dishes are deceptively simple but are developed with skill and creativity.
Tom has worked at several multi-Michelin star restaurants, including Restaurant Geranium, Hof Van Cleve and Simon Rogan’s Rogan & Co and L’Enclume, and was also awarded the Roux Scholarship in 2014. In 2020, he was invited to compete in the 15th series of BBC2’s Great British Menu, where he won the main course at the final banquet.
Tom and his team serve 12 and 15-course tasting menus and a shorter four-course lunch menu which focus on skill, quality ingredients and simplicity and embrace Tom’s farm-to-table philosophy. Many of the ingredients used are grown especially for him at Simon Rogan’s Our Farm in Cartmel and by local artisans like Cinderwood Market Garden in Nantwich.
Skof is located within the terracotta tiled Hanover building, originally a bustling drapery warehouse back in 1904. Drawing from the building’s rich character and the city’s industrial heritage, we at Blacksheep were inspired to intertwine natural, urban, Edwardian, and industrial elements.
